Sweet'n'Sour Fanta Chicken


IMGP3421 I wish I could take credit for this one, but sadly I can't! I don't even know who to credit this one to, either, as I found it in a folder of "anonymous" recipes in my first ever fat club group.

Now, I'll admit straight away that this shouldn't work. The idea of it should horrify you, initially, but hopefully also intrigue you enough to give it a go. And I promise, you won't be disappointed!

This very quickly became one of my favourite meals - I go through loooong phases of having it once a week, then we have a break for a few weeks... but it's never for long! Give it a whirl, and you'll find out why!


2 Chicken Breasts, chopped into bite-size pieces

1 Onion

1 Red Pepper

1 Green Pepper

600ml Fanta Zero

6tbsp Tomato Puree

2tbsp Vinegar

1tbsp chilli flakes

2 Vegetable Oxo Cubes

This is enough for two, quite comfortably - and plays particularly well with noodles or chips! I'm not so keen on having it with rice, but it's a valid option!


1. Brown the chicken in a wok, then add the onions and peppers to soften.

2. Add all the other ingredients, stir through, and bring to the boil.

3. Let it bubble away, stirring occasionally, for about half an hour until it thickens.

4. Wait. We're done? That was easy!




Tidy Savings

It's a fairly comfortable win for Tesco this week, with their £7.55 bringing them in ahead of Morrisons' £7.94.

ASDA and Sainsburys were a fair bit further out, with £8.11 and £8.76 respectively.

Tidy Tweaks

The beauty of this is that you can chuck other ingredients in if you fancy. I often add some mushrooms in there. At one point, broccoli featured regularly, but I found the florets held the heat far too much, and made for ridiculously uncomfortable dining experiences - although they may have been interesting to observe!

I've tried variations of this with a lemon & lime soft drink, but the flavour was far too subtle, and not at all worth the effort. I also keep hearing wonderful tales of Ham cooked in diet cola, although I'm yet to try that!

You could use different meats in here. Ham or pork would work well... I'm not sure if the sauce would be robust enough to work with beef (and actually, I don't think I've ever heard of sweet n sour beef). Alternatively, Quorn is a good veggie substitute, or you could just go all-veg!

Fruit is also an option, with pineapple being a noticeable absentee from the ingredients list!
